Chicken-n-Dumplings!

Today is a slow blog day. My brain must be tired. I don't have much to say, except this - yesterday I made Chicken-Dumplings from scratch. Yes, I said from scratch, no frozen, store-bought dumplings. No tortillas, no cheatin' cut up lasagna noodles (all of which, I might add, are wonderful substitutes and have all been used by moi!) but honest to goodness, down home, country, roll out the flour, cut'em and thrown'em in the pot chicken and dumplings. They weren't bad - even if I say so myself. I probably could have rolled them out a little flatter - but all in all I was pretty proud of myself. I have fond memories of that wonderful comfort food. My grandmother and a wonderful lady in Mississippi used to make them for me. Both of them passed on long before my cooking days and I never really got "taught" how to make the dish. My mother would rather eat an elephant than touch raw dough, so learning how to make dumplings or biscuits from her never happened. I have had to pick it up all on my own. But yesterday, I was proud, really proud of my accomplishment. And the fact that my dear husband actually ate them and cleaned his plate just added to that feeling.

So, if you need a recipe for Chicken-n-Dumplings - call me - I think I have the hang of it now.
